This has to be one of the yummiest chia seed puddings I have ever had. I made this the night before, while dinner was simmering, as the chia seeds do need to soak in the mango milk mixture. For those of you in Australia this a great recipe with summer almost there! I would eat this almost everyday if only mangos weren’t so sporadically available in the supermarket… and be a bit pricey from time to time.
INGREDIENTS: 3-4 Mango pulps, 3 cups of milk, 1 1/2 cups cashew, 3/4 cups chia seeds, honey… for as sweet as you like it
1. Throw everything into the blender for a minute or two
2. Pour into an air-tight container, leave in the fridge.
3. Enjoy in the morning!!
